The Florida stone crab, scientific name Menippe mercenaria, is one of the tastiest varieties of crab.

The crab is harvested in such a way that only one claw is pulled from the crab, and then the creature is returned to the sea, where the missing claw will regenerate (and the crab can defend itself with its remaining claw).
